Does anyone know of a recipe for a Chinese animal cookie?

There are these animal cookies that are usually filled that I can't find a recipe for. I saw them on tv a while back & have yet to find a recipe. I can't remember what they are filled with. Anyone know of a hidden website or book?

Molasses-ginger animal cookies


¾ cup vegetable shortening
1 cup sugar
¼ cup light molasses
1 large egg
2 ½ cups flour
2 teaspoons baking soda
¼ teaspoon ground cloves
¼ teaspoon grated nutmeg
½ teaspoon ground ginger
1 teaspoon ground cinnamon
½ teaspoon salt

Melt shortening in saucepan on low. Add sugar and molasses. Beat egg and add; stir. Put in large bowl. In small bowl, mix flour, baking soda, and spices, stirring until blended. Add to molasses mix. Chill 1-2 hours.

Preheat oven to 350ºF. Roll dough on wax paper (floured) to ¼ inch. Grease 3 baking sheets. Cut with cookie cutters. Sprinkle with sugar. Bake 8-10 minutes. Remove and let cool for 5 minutes on wire racks.

Yield: 3 dozen
